Deep in the swing of summer, ice cream is essentially its own food group – nothing quite screams summer like a tall ice cream cone, after all. But if the refined sugar in most store bought ice cream is dampening your pleasure in the cool treats (who wants dessert with a side of guilt?), this raw honey-sweetened ice cream recipe will free you to fully enjoy a scoop or three.
Originally featured in our 15 Ways to Use Honey post, the raw honey will add depth and complexity of flavor to the final result. This recipe is also an excellent base for other flavors, and nuts or fruits can be added as desired.
Due to the presence of raw eggs in this recipe, avoid serving it to children or pregnant women.
2 whole eggs
1 egg yolk
1/2 cup raw honey
2 cups heavy whipping cream
1 cup milk
2 teaspoons vanilla extract
Mix ingredients together until honey is thoroughly incorporated, pour into ice cream maker and set according to manufacturer’s instructions.
